Because it's a mnemonic device for remembering the 7 colors of the rainbow in order (red, orange, yellow, green, blue, indigo, violet), and Ho-oh is related to rainbows or something.

Albireo
Albireo is a twin star with many definitions to it's name. They do, however, share the concept of a Bird, and Albireo A is the golden star. Ho-oh is a fire/flying type, which fits well with Albireo, a star with a name that means "The Bird". I would also like to point out that Lugia, Ho-oh's counterpart, is blue and also (Probably?) a bird, which fits Albireo B, a blue star.

Thank you for just calling it Albireo and not Albireo A like an idiot. Anyways, I like it.

Apollo
Apollo is the greek god of the sun, of poetry and of music. Birds usually make amazing tunes and we usually say they are singing. Ho-oh is a bird. And apollo is god of the sun, Ho-oh is a fire type. It just fits, for me anyway.

OBJECTION!
Ho-oh is a Fire/Flying type associated with resurrection, like a phoenix. There is a video game called Phoenix Wright: Ace Attorney, and the catchphrase of the entire series is Objection!

Kincho-Ni
He is the ultimate bird! He happens to be a shiny Ho-oh. I thought of Kincho-Ni words in Japanese collided: Ki (energy), naru (familiar), chikara (force), and oni (demon). But rough translation just said 'the nervous'.

Phoenix
As a firebird, I think ho-oh looks distinctly like a phoenix - it is even the same type too. it sounds nice, has a proper meaning, and goes well with ho-oh's many colours, I guess. Now, give me criticism. I like your criticism. *grabs criticism*
